Spareribs Balsamic

Quick step by step guide

Step 1: Remove the membrane from the ribs. Then rub the ribs on both sides.

Step 2: Heat your BBQ up to 120 degrees. Prepare the BBQ indirect. Add some smoke wood (oak or cherry wood). Place the spare ribs on the grid and smoke for 2-3 hours depending on the thickness.

Step 3: Meanwhile, make the balsamic glaze. Use 100 ml of water, 100 ml of balsamic vinegar and 50 grams of sugar. Add together in a pan over medium heat. Bring to a boiling point and simmer for 10 minutes. Let it cool a little and check if the substance is slightly syrupy. Otherwise continue simmering.

Step 4: After smoking for 2-3 hours, start glazing the ribs. Glaze every half hour. Maximum 3 times.

Step 5: Remove the spare ribs from the BBQ. Allow to cool slightly and then cut along the bone. Enjoy!

Explanation guide with pictures

Step 1

Remove the membrane from the ribs. Insert a screwdriver or blunt knife just below the fleece and pull it up. Also cut away fatty edges and loose pieces. Then rub the ribs on both sides. Use a rub with bell pepper such as Good Shit from the Big Cock Ranch. Pig Rub from Smokey Goodness or the LetzQ Pork Rub are very good alternatives. You can also keep it basic with just a little pepper and salt.

Step 2

Heat your BBQ and up to 120 degrees. Prepare the BBQ indirect. Add some smoke wood (oak or cherry wood). Place the spare ribs on the grid and smoke for 2-3 hours depending on the thickness. Normal babyback ribs are ready after 2 hours, but spare ribs or thickly fleshed ribs need an hour longer. You could wrap the ribs in foil for an hour (or cook slightly longer).

Step 3

Meanwhile, make the balsamic glaze. Use 100 ml of water, 100 ml of balsamic vinegar and 50 grams of sugar. Do not use very expensive balsamic vinegar, unnecessary. The cheapest brand from the supermarket will do fine. Add everything in a pan over medium heat and stir until the sugar has dissolved. Bring to a boiling point and simmer for 10 minutes. Let it cool a little and check if the substance is slightly syrupy. Otherwise continue simmering. Note: the hot substance is more fluid than when cold. Something to keep in mind.

Step 4

After 2-3 hours of smoking we can start glazing the ribs. Use a silicone brush and do not apply a very thick layer. We are glazing it several times. Do this every half hour. After the third coat, let the ribs cook for another 15-30 minutes and then they are ready.

Step 5

Remove the spare ribs from the BBQ and let them cool off. Then cut along the bones and serve. Enjoy!

  • Good quality spare ribs or baby back ribs.
