Quick step by step guide

Step 1: Remove the seeds from the jalapenos and fill them with the cream cheese, coriander and cheddar.

Step 2: Form the ground pork/beef into balls of equal size. Flatten the meatball, place the jalapeno in the middle and wrap the meat around the jalapeno. Rub the eggs generously.

Step 3: Heat the BBQ to 170 degrees indirect. Add some smoke wood and place the eggs on the grill. Let them smoke for 20 minutes.

Step 4: Make the sauce according to the recipe (see below). Glaze both sides of the eggs with a silicon brush.

Step 5: The sauce has to “set” on the meat so leave them for another 10 minutes. After that cut them open and serve with your homemade BBQ sauce.

Explanation guide with pictures

Step 1

For 5 eggs you need about 500 grams mixed (50% pork and 50% beef) ground meat. Only ground beef can also be used, but will give a drier end result because the fat content is lower. Of course you also need 5 jalapeno peppers for 5 balls.

Take 10 grams of coriander and pick the leaves from the stalks. Then cut as finely as possible. Grate 50 grams of cheddar cheese (or buy grated). Add this to 50 grams of cream cheese and mix thoroughly. Empty the jalapenos and then fill them with the mixture.

Step 2

Form 5 balls of equal size. Then push them flat and place the jalapeno in the middle. Fold the minced meat around it to form an egg. Then generously rub the eggs and make sure that all sides are covered. We are very fond of the piggy mix of Smokey Goodness, but if you have a favorite rub yourself, that is fine too.

Step 3

The BBQ has to be 140 degrees indirect. Add a chunk smoke wood, for example cherry or apple wood. It may also be somewhat heavier wood such as beech or oak. Put the eggs on the grid and let them smoke for 20 minutes.

Step 4

After 20 minutes it is time to glaze the eggs. But not before we have made the sauce:

Put a pot on the fire and add 10 ml of cola, 10 ml of apple juice and 10 ml Worcestershire sauce. Bring to boiling point and then add 10 gr rub, 10 gr brown sugar and a small dash of Tabasco. Let the sugar dissolve. Finally add 100 grams of ketchup and 10 gr of honey. Mix thoroughly and turn off the heat. Pour the sauce into a bowl and use a silicone brush to glaze the eggs. Then turn them over and do the other side. Grill for another 10 minutes.

Step 5

The sauce has to “dry” so wait at least 10 minutes. Check the core temperature if you want to be sure (70 degrees for ground meat). If the sauce is still too wet you can leave it for a few more minutes. Remove them from the BBQ and cut the balls in half. Serve with your homemade sauce and enjoy!
