Drumsticks but slightly different

Quick step by step guide

Step 1: Cut the skin from the bone just below the knuckle. Push it down and form a ball. Remove the loose ends on the knuckle.

Step 2: Rub the chicken lollypops.

Step 3: Heat the BBQ to 160 degrees indirect. Grill the chicken for 15 minutes.

Step 4: Glaze the chicken with a silicon brush.

Step 5: The sauce has to “set” on the chicken so leave them for another 10 minutes. Serve with some beers or a glass of wine.

Explanation guide with pictures

Step 1

For a good snack you need about 10 – 15 chicken drumsticks. Cut the skin just below the knuckle, just above the thickest part. Cut the skin around the bone and push it to the thick part so that the bone becomes visible. Cut away the remainder on the tip as much as possible.

Step 2

Rub the chicken. We use the LetzQ chicken rub this time. The Smokey Goodness Cheeky Chicken is a good option or a homemade rub with curry and paprika.

Step 3

The BBQ has to be 160 degrees indirect. Put the chicken on the grill and let them cook for 15 minutes.

Step 4

After 15 minutes it is time to glaze the chicken lollypops. We use Don Marco’s Mango Habanero Coconut sauce. This works because of the sweet and spicy flavor. Try for yourself what you like or split the chicken in two parts and on the one half do a different sauce than on the other half.

Pour some sauce into a bowl and use a silicone brush to glaze the chicken. Grill for another 10 minutes.

Step 5

The sauce has to “dry” so wait at least 10 minutes. Check the core temperature if you want to be sure (70 degrees for chicken). If the sauce is still too wet you can leave it for a few more minutes. Remove them from the BBQ and open a few beers or a bottle of wine. Enjoy!
