Pineapple with shrimps

Quick step by step guide

Step 1: Cut the pineapple in half. Remove the inside from each half.

Step 2: Dice 2 cloves of garlic, an onion and some parsley. Skewer the shrimps on a stick.

Step 3: Heat the bbq to 200 degrees direct. Grill the shrimps for 1 minute on each side and the pineapple for 3 minutes on each side.

Step 4: Dice the grilled pineapple. Put a pan with butter on the fire. Add the garlic, the onion and the coconut milk. Mix thoroughly and add the cheese spread. Add the pineapple, the shrimps and the parsley and mix the whole into a creamy substance.

Step 5: Fill the empty pineapple halves. Pour grated Parmesan cheese over the pineapple and put the halves on an indirect BBQ at 200 degrees. Leave for 10 minutes until the cheese turns brown. Serve with rice.

Explanation guide with pictures

Step 1

Take a large pineapple and preferably a ripe one. These are sweeter and softer. Cut it in half lengthwise and keep the crown intact. Take a small knife and cut around and try to get the halves out in one piece, because these halves have to be grilled. Grab a spoon and empty the pineapple as neatly as possible.

Step 2

Take the 2 cloves of garlic, the onion and the parsley and dice everything. Make sure the shrimps are thawed and put them on a skewer or stick for grilling.

Step 3

The BBQ has to be 200 degrees direct. Place the shrimps and the pineapple side by side on the grill. Grill the prawns for a maximum of one minute on each side or they will be dry and overcooked. The pineapple may take 3 minutes on each side and make some grill stripes. Grill with open or closed lid.

Step 4

Cut the grilled pineapple into small cubes. Put a pan on the fire with a little butter. Then add the garlic first, then the onion and bake the onion and garlic until brown. Add the coconut milk and then the cheese spread (La Vache Qui Rit is fine). Mix everything together and lower the heat a little. After a minute a creamy substance will develop. Now add the pineapple and the prawns. Stir and turn off the heat. Finally add the finely chopped parsley.

Step 5

Fill both halves of the pineapple with the mixture. Do not fill above the edge. Sprinkle generously with Parmesan cheese or with another grated cheese that you like. Make sure your BBQ is ready for indirect heat with a temperature of 200 degrees. Place both pineapple halves on the grill and close the lid. Wait 10 minutes. When the cheese turns brown, your dish is ready. Serve with rice and enjoy!
