Smoked nuts
the ideal snack to go with a beer

Quick step by step guide
Step 1: Fill a bowl with your favorite nuts. The picture above is just an example.
Step 2: Rinse the nuts under the tap and drain them. Do not dry them, the rub sticks better to the nuts when wet.
Step 3: Mix 2 tablespoons of rub with the nuts. Mix the rub and the nuts thoroughly. Heat your BBQ to 130 degrees indirect. Add a chunk of smoke wood.
Step 4: Put the nuts in a cast iron pan or better a vegetable basket where you normally roast vegetables. Do not forget to shake the nuts every 15 minutes to prevent burning.
Step 5: After a total of 60 minutes the nuts are properly roasted. The warm nuts are soft, so let them cool for at least 30 minutes. Serve with an ice cold beer.
Explanation guide with pictures
Step 1
Choose some nuts that you like. You can smoke almost all nuts. Buy unsalted nuts, because you create the taste with BBQ rub. Make a bowl of mixed nuts (or only cashews for example). You can also make 2 or 3 batches. You can store smoked nuts for up to 4 weeks.
Step 2
Keep the bowl under the tap and rinse the nuts well. Do not dry the nuts. They must be wet so the rub will stick to the nuts.
Step 3
The BBQ has to be 130 degrees indirect. Add a chunk of smoke wood, for example cherry or apple wood. Mix 2 large tablespoons of rub with the nuts. Use more rub if you are going to smoke more nuts. It remains a matter of taste, so try out what amount and which rub you like. We use a homemade rub for beef in this recipe. But a curry-based rub for chicken for example is also very tasty.
Step 4
Put the nuts in a cast iron pan (a skillet) or better yet: a basket in which you normally roast vegetables. Weber sells these baskets, they are called vegetable basket. Place on the grid in the middle of the bbq. Do not forget to shake the nuts every 15 minutes or stir with a spoon so that they do not burn.
Step 5
After a total of 60 minutes, the nuts are ready. The warm nuts are soft, so let them cool for 30 minutes first. Do not put them in your mouth right away, they are very hot! Serve with an ice cold beer.
